Three Sour


Ingredients

  • 1 cup boiling water
  • 2 small limes, cut in half
  • 2 lemon wedges
  • 2 sour or salty plums
  • 1 tablespoon sugar
  • Ice

Directions

  1. Clean the lemons and limes. Add boiling water to all ingredients and allow to cool. You may scale up the ingredients to make a pitcher of three sour. I usually make 5 cup batches.
  2. Strain ingredients and place in a glass and add ice. May garnish with lemons, limes, and plums. I also squeeze all juice from lemons and limes.

Tip: You can adjust the sweetness by making a sugar syrup. Just  boil one cup of water with one cup of sugar. You simmer the mixture while continually stirring. Once the sugar dissolves, then let the syrup cool.

Tip: Salty plums neutralizes the sourness of the drink.

Three Sour with Lemon, Lime, and Sour Plum

Cinnamon Whiskey


Ingredients

  • 1 liter Jack Daniels or similar whiskey
  • 1 cup sugar
  • 4 cinnamon sticks
  • From 4 to 10 red, chili peppers

Directions

  1. Bring the water and sugar to a boil. Continue stirring to dissolve all sugar. Allow sugar syrup to cool.
  2. Remove several cups of whiskey from bottle. Add 2/3 cup sugar syrup, chili peppers, and cinnamon sticks. For more spicy whiskey, add more red chili peppers. Fill bottle to top with whiskey; screw on lid, and shake.
  3. Allow to age at least one week. Enjoy over the rocks.

Tip: You can adjust the sweetness by adding more sugar syrup as needed.

Cinnamon whiskey

Iced Milk Coffee


Ingredients

  • Ground or instant coffee
  • Sugar
  • Milk
  • Ice

Directions

  1. Boil water. Then make extra strong coffee. A cup of coffee is usually 1 tablespoon of coffee. Thus, I double the concentration and make a cup of coffee with 2 tablespoons. I like to use ground coffee for the flavor but instant coffee works for this recipe.
  2. For each cup of coffee, I add one tablespoon of sugar. I greatly reduced the sugar in my diet, so I am sensitive to the sweetness of sugar. (I can even taste the sugar in bread). You must add the sugar while the coffee is hot for it to completely dissolve.
  3. Let the coffee cool. Fill a glass with ice and pour the coffee into the glass. Add at least a 1/2 cup of milk.
  4. Enjoy.

Iced millk coffee

Lime Juice


Ingredients

  • 1 and 1/2 liter water
  • 1/2 kilogram (or 1 pound) small limes
  • Sugar
  • Ice

Directions

  1. Clean and wash the limes. I hold back several limes for a garnish. Cut the limes in half and add to a bowl or container.
  2. I add five tablespoons of white granulated sugar to the limes. I greatly reduced the sugar in my diet, so I am sensitive to the sweetness of sugar. (I can even taste the sugar in bread). I imagine you may need to add 10 tablespoons of sugar of more.
  3. Add boiling water and cover the container. Once the mixture has cooled, strain the mixture into a pitcher. You want to removed the seeds and pulp. Then squeeze the limes to remove the juice. Also pass the lime juice through a strainer.
  4. I believe the boiling water removes some of the oils and essence from the lime's rind that further adds flavor to the juice. Slice several limes and add as a garnish. Chill and enjoy.

Tip: The lime juice serves as an excellent mixer for vodka and whiskeys.

Lime juice

Homemade Coffee Liqueur


Ingredients

  • 1 cup instant coffee
  • 1/2 cup brown sugar
  • 1/2 cup white granulated sugar
  • 2 cups water
  • 2 teaspoons vanilla extract
  • 1 liter vodka (40% alcohol)

Directions

  1. Bring the water to a boil. Add the coffee and sugar. Continue stirring to dissolve all sugar.
  2. Let the mixture cool and add the vanilla and vodka. Stir mixture and strain into a bottle. Do not add the vodka to a hot mixture or allow the mixture to sit in the open air. Alcohol has a lower boiling point then water and will evaporate.
  3. The yield of this recipe is 1.5 liters. The alcohol content is around 26.7%. This number is easy to calculate. We know if vodka is 40% ethanol, then the vodka contains 0.4 liters of ethanol. We measure the final product in liters. Then we divide 0.4 by 1.5 in my recipe which yields 0.267 ethanol (or 26.7% ethanol).
  4. I reduced the sugar in my diet, so this recipe uses half the sugar in regular recipes. You can adjust the sweetness by adding a sugar syrup.
  5. Enjoy over the rocks or add one part liqueur and one part milk to a glass of ice.

Tip: Kahlua is about 20% ethanol, so my recipe is a tad stronger.
